Cookies and Cream Ice Cream

Mmmm.... the first ice cream of the summer, and it's homemade!

I modified this recipe from the one that came with my ice cream machine. Strangely enough the one that came with the machine made too much batter to actually fit in the bowl... so I've modified it so it doesn't overflow the mixer anymore.

Start with the base, which is an amazing Vanilla Ice Cream

2 cups half and half (creamo, light cream, whatever you want to call it)
6 eggs yolks
1 cup sugar
2 cups whipping cream
4 tsp vanilla

Then add
1 1/2 cups add ins... for this recipe I used crushed Oreos and made Cookies and Cream

Heat half and half over medium heat in a mid-sized saucepan until it is very hot, but not boiling. Meanwhile in another bowl, whip together egg yolks and sugar until well blended, and slightly thickened. Pour in the heated half and half and mix until well blended.

Return mixture to the saucepan and heat until it is steaming and small bubbles form around the edges but not boiling. Stir constantly as it heats.

Pour into a bowl (with a spout), then stir in whipping cream and vanilla. (Use really good vanilla if you can, I use my favourite stuff from Mexico). When the mixture is well blended chill for at least 8 hours.

Then follow the instructions on your ice cream maker to finish!

Chocolate Ice Cream

I haven't posted in ages... and I can't really say I've been busy either, I've just been playing way to much Minecraft. But I've also been creating some tasty creations, and then forgetting to photograph them. Anyway, one of the things I've been making a lot of lately is ice cream. I was given and ice cream maker for my birthday and I love it. This is my favourite recipe so far, its a chocolate base which you can then turn into whatever you like!

Chocolate Ice Cream

1 can sweetened condensed milk
1/2 cup cocoa
2 cups whipping/heavy cream
1 cup light cream (Creamo, or half & half)
1 tbsp vanilla
Whatever mix-ins you like! (I've done rocky road, which is marshmallows, peanuts and chocolate chips and also caramel-pecan, which is pecans and caramel sauce)

Mix together sweetened condensed milk and cocoa in a saucepan. Cook over low heat until smooth and slightly thickened. Allow to cool slightly. In another bowl, combine whipping cream, light cream and vanilla. Stir in cocoa mixture until well combined, this works best if you whisk it in, or if you wait a few minutes so that most of it can dissolve into the mixture and then stir in the rest. Chill for several hours until cold. Then freeze in ice cream maker using manufacturer's directions. Mix in your extras according to the directions for your ice cream maker.

Pretty much, this is the best ice cream I've ever tasted. Also, the recipe is super flexible and so you could make a ton of different flavours from the same chocolate base!

Ice Cream Cookies

Okay, so these were the weirdest cookies I've ever made and they turned out terrible! Which was really weird because they have a really high rating on Allrecipes, so I don't know if I did something wrong or what but they were gross. I was going to take them to work but I was too embarrassed to, so my Dad took them to his office instead and apparently somebody liked them because they got gobbled up. But I personally thought they tasted more like biscuits than cookies and I hate biscuits.

I got the recipe from the Allrecipes Christmas Cookie Countdown (a new cookie recipe every day for 25 days!)

1 pint vanilla ice cream (A US Pint is 473 ml, A UK Pint is 568 ml, I started with the US Pint amount but it didn't look right so I upped the amount of ice cream and it still didn't work)
2 cups butter
4 cups flour
Fruit Jam (I used Raspberry and Strawberry)

Cut butter with flour. Mix in ice cream. (Use your hands, you may want to put on gloves first because it will be cold). Form dough into ball. Refrigerate overnight. Preheat oven to 350. Roll out dough. (My dough was no where near a consistancy that could be 'rolled out' so I just shaped little balls with my hands) Cut circles with the rim of a glass, make a thumbprint in the center of each cookie, fill thumbprint with jam. (I just shaped balls with my hands and made a thumbprint in them) Place cookies on cookie tray lined with parchment paper. (Parchment paper is very important here!) Bake for 20 minutes.

Like I said, I thought these were disgusting but other people liked them. Try at your own risk!

Cherry Ice Cream

My family has owned an ice cream maker since before I was born but I can't remember ever actually using it. So, when someone suggested that I make cherry ice cream as one of the uses for the 30 cups of cherries I had, I decided to go for it.

For this recipe an Ice Cream maker is required.

1 egg
1/3 cup sugar
1/4 tsp vanilla
1 cup cream
1 cup chopped cherries

Beat egg and sugar until thick and cream coloured. Add vanilla, cream and cherries. Mix well. Chill and then follow the instructions for the ice cream maker.

Mmmmm.... home made ice cream. This was very very tasty. It didn't make a lot but enough for 3-4 people to have dessert. And it was so good.
